I know that when you all come here, you just love the chocolate chip cookies. But it is Christmas, so we need to be thinking of something a little bit different, ok? So we have been working on our holiday cutouts, but with a bit of a different twist…eggnog. That’s right, Eggnog Cookies. So far, all I have gotten is raves. So here is the recipe. And don’t worry. The chocolate chipper will be back after the holidays. Have a great one!
1 C unsalted butter 1/2 tsp fresh ground nutmeg
2 C confectioners sugar 3/4 tsp salt
2 T light corn syrup 1 large egg, lightly beaten with 2 T water
3/8 tsp eggnog flavor 2 tsp baking powder
3 1/2 C flour
Cream together butter, sugar, and corn syrup until light and fluffy. Beat in the eggnog flavor, nutmeg and salt.
Add the baking powder to the egg and water, and stir to dissolve. Add this mixture, along with the flour, to the ingredients in the bowl and beat until smooth.
Divide the dough into three pieces, wrap them in plastic and refrigerate for 1 hour, or overnight.
Preheat oven to 350. Take out dough and roll to 1/8″ thickness on a lightly floured work surface. Cut in desired shapes, and transfer to ungreased cookie sheet. If desired (we do) paint the cookies with a bit of milk, then sprinkle with colored sugar. Bake just until slightly brown on edges, about 8 minutes.
