A few months ago, I tasted some wonderful cheese
being served at a local function. I tracked down the source, and come to find out it is a cheese shop in Mayville, New York, called Reverie Creamery (https://www.reveriecreamery.com)
I took a trip out to their shop (not far from Chautauqua Institute) and met with the owners, Riko Chandra and Jim Howard. They have been in business for over a year, and are sourcing all of their ingredients for their own cheeses from local, grass fed cows and goats. They also carry a nice selection of small American artisanal cheeses. All of the cheeseboards, and other gift items in the shops are collaborations of local folks.
We took several of their cheeses with us, and tried pairing them with suggested wines at a couple of the local wineries, including Liberty (http://libertywinery.com) and 21 Brix (https://www.21brix.com) although my mind boggles at the number of other wines and wineries that would make good pairings. We have been featuring some of their cheeses in wine and cheese pairings with local wines, homemade
crackers and spiced pecans.
