By popular demand, here is the recipe for the Grape Arbor classic Apple Crumb Cake.    This treat is loaded with a full two pounds of apples and a buttery crumb topping.

What makes it easy is that the same mixture that is on the top, forms the bottom crust as well.  For best flavor and texture, use multiple kinds of apples–we like Granny Smith for their tart firmness, along with Gala and McIntosh for sweetness.  Use your favorites, or whatever you have on hand.

A make-ahead tip–the apples can be made the night before.  Then, just mix together the crumb portion and into the oven it goes.  I like it best on the same day made, warm….but it would also be good for dessert with a little vanilla ice cream on top.

  • 2 pounds apples, peeled, cored, thinly sliced--we suggest multiple kinds
  • 1/4 cup water
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • Optional 1/3 cup raisins
  • 1 1/2 Cup flour
  • 1/4 tsp salt
  • 4 oz butter
  • 1 large egg
  • 2 tsp vanilla
  • 1/3 cup sugar
  • 1 1/2 tsp baking powder


    Combine apples, water, sugar, cinnamon and raisins (if you are using them) in a wide shallow pan or skillet. Cook over medium heat, stir occasionally until apples are soft and liquid is thickened, about 20 to 30 mins.

    In a medium size bowl, whisk together flour and salt then cut the butter in using your fingers, a fork, or a pastry cutter.

    In a separate bowl, stir together egg, vanilla, sugar and baking powder..

    Combine wet and dry ingredients and stir to form a soft dough.

  3. Lightly butter an 8 inch spring form pan. Press a bit more than half of the dough mixture into the bottom of the pan. Prick it all over with a fork. Spoon the filling onto the crust. Crumble the rest of the dough onto the top of the filling. It won't entirely cover the filling, just break off small pieces and arrange it evenly.

  4. Bake in a preheated 350F oven for about 40 minutes until it is golden brown.
    Remove from oven and allow to rest for 5 mins before running a knife all around the edge. The cake may be sliced after resting 5 to 10 more minutes if you want to serve it warm.
