This recipe for roasted plums is great for breakfast or dessert (with a bit of ice cream on top).  Sometimes at breakfast, we get wrinkled noses from guests who think they don’t care for cooked fruit…but most of the time we are able to convert them!

Plums that are hard or slightly hard are best for this dish, ripe ones will disintegrate!

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Total Time: 25 Minutes
Servings: 6

Ingredients:

  • 6 plums, any variety, hard or slightly hard
  • 4T unsalted butter, melted
  • Vanilla Bean or Vanilla bean paste
  • 1 T granulated sugar

Instructions:

  1. Preheat oven to 400 degrees. Put melted butter in a glass 9x13 pan. Add the seeds from one vanilla bean, or 1/2 tsp vanilla bean paste. Swirl with a fork so it is evenly distributed.

  2. Cut plums in half, remove pit. Place cut side down in butter/vanilla mixture. Sprinkle with granulated sugar.

  3. Bake until just able to pierce with a sharp knife, about 10 - 15 minutes, depending on ripeness of fruit.

  4. Serve warm with yogurt or ice cream.
