Slice of egg bandito with two sausage pattiesGuests love this egg casserole!  Don’t worry, you can make it as spicy or as mild as you prefer.  Once you have all of the ingredients, it comes together quickly, so it makes a great easy breakfast.  We tested it first on a Christmas morning several years ago, and even made homemade salsa for it.  Maybe it will become your holiday special egg casserole!

It is ok to use stale tortilla chips, and is a great use of those little bits at the bottom of the bag (if you have any).  Vary the cheeses, as well!  Make it your own.

  • 8 large eggs
  • 1 tsp. fresh lime juice
  • 3/4 C roughly crush tortilla chips
  • 1/4 tsp ground cumin
  • 1/3 C salsa verde
  • 3/4 C shredded pepper jack cheese
  • toppings: Chopped cilantro, sour cream, chopped tomatoes


  1. Beat the eggs with the lime juice until light.

  2. Saute the tortilla chips with the cumin in a nonstick 8-inch frying pan until the cumin is fragrant.

  3. Add eggs, scramble until lightly set.

  4. Remove from heat, spread with salsa verde, top with cheese.

  5. Broil for about 2 minutes, or until cheese is brown.

  6. Cut in quarters, serve with toppings.
