Peaches just taste like summer to me!  So what better way to use them than in an easy to put together peach muffin.  You don’t even have to peel the peaches, and a stand mixer makes quick work.  These peach muffins have a delicate cake-like texture.

Don’t forget the sugar on top, it makes it delightfully crunchy.!

Ingredients:

  • 6 Tablespoons unsalted butter
  • 1 C Sugar
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 Tablespoon baking powder
  • 2 large eggs
  • 2 C flour
  • 1/2 C milk
  • 1 1/2 C finely diced peaches, unskinned
  • Course white sugar for topping

Instructions:

  1. Preheat oven to 375 degrees. In a large mixing bowl, cream together the butter, sugar, vanilla, salt and baking powder.

  2. Add the eggs, one at a time, beating until smooth.

  3. Stir 1C of flour into the batter, then the milk, then the remaining flour. Stir in the diced peaches.

  4. Put paper baking cups in 12 muffin tins. Spray the inside of the papers, and the outside edges of the muffin tins. Scoop the batter into the paper baking cups (they will be pretty full) Bake the muffins in a preheated 375 degree oven. Check after 20 minutes, tops should be lightly browned. Test with a toothpick to make sure it is cooked through.

    Rest in muffin tin for about 5 minutes, then remove and cool on rack.
